Whenever we go to Montana to visit family I always raid my SIL's recipe books. She has the most fabulous and usually very easy recipes. Here are two of my favorites:
Potato Chowder
8 C. peeled, diced potatoes (small cubes/pieces)
1/3 C. chopped onion
3, 14oz cans chicken broth
1 can cream of chicken soup
1/4 tsp pepper
1, 8oz pkg cream cheese
crumbled bacon
chopped chives or scallions
Mix first five ingredients in a crock pot (potatoes through pepper), cover and cook for 8 hours. At 7.5 hours add cream cheese (cubed small and then mixed in). Serve in bowl and add bacon and chives for topping.
Carla Chili (I don't know who Carla is but her chili base is amazing!)
Brown hamburger - season (I use 1 lb of hamburger)
1 large can stewed tomatoes
1 can light kidney beans, drained and rinsed
1 can dark kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can canolini (white beans), drained and rinsed
1 packet of McComick's chili seasoning
1 can tomato soup
1 cup water (or use your eye for your own thickness preference)
Simmer in crockpot. (I add other goodies to mine like onion, corn, etc)
